Seasonal Recipe: Miso Tofu "Karaage Chicken"

Embrace the season with this delicious vegan twist on a classic, courtesy of Dinah Crowe:

Ingredients:

  • 2 heaped teaspoons miso paste
  • 1 tablespoon black vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon finely grated garlic
  • 1 teaspoon finely grated ginger
  • 1 tablespoon oil
  • 2 tablespoons water
  • 1 tablespoon dark soy sauce
  • Firm tofu
  • Gluten-free flour
  • Quinoa crumbs
  • Rice bran oil for frying
  • Sea salt and fresh lime juice for seasoning
Instructions:
  1. Cube firm tofu
  2. Mix miso paste, black vinegar, sesame oil, garlic, ginger, oil, water, and soy sauce for the marinade
  3. Coat tofu in gluten-free flour, then miso marinade, and finally quinoa crumbs
  4. Fry in rice bran oil until golden
  5. Season with sea salt and fresh lime juice
This vegan, dairy-free, and gluten-free dish is perfect for a light spring meal that doesn't compromise on flavour.
